My wonderful fiance is in the midst of medical school test block, which means that the med students have one three hour test per day on Monday-Thursday of one week. These test blocks happen about every five weeks and are super stressful for the students because there is just so much to learn! Test block week means that I don’t see much of Mark, but of course I understand and try to keep myself busy. To keep myself occupied last night I baked Snickerdoodles!!!
Mark requested him out of the options I gave him and he deserves a sweet treat as a reward because he aced his first two test woohoo!!! I thought these cookies turned out really. Mark, the cookie tester, sent me two texts in between studying saying “the cookies are awesome” and then “I love them” so they must be pretty good
Snickerdoodle tower!! Here is the recipe that I used, not being able to resist making a cookie just a little bitty bit healthier (It just makes me feel so much better to give my loved ones something that not only tastes good, but is good for them!)
Sinckerdoodles (Adapted from Vegetarian Times recipe)
1 cup all purpose flower
3/4 whole wheat pastry flour
1/4 cornstarch
1 tsp. baking powder
1 stick (4 oz.) vegan margarine, softened
3/4 sugar
1/4 vanilla almond milk, soymilk, or whatever you please
1 Tbs canola oil
1 tsp. vanilla extract
Cinnamon Sugar: 1/2 cup sugar 3 Tbs cinnamon
DIRECTIONS
- Preheat oven to 350°F. Coat baking sheet with cooking spray.
- To make Cookie Dough: Whisk together flour, cornstarch, and baking powder in bowl. Beat margarine in separate bowl with electric mixer until soft. Add sugar, and beat until fluffy. Beat in soymilk and vanilla extract 30 seconds or until smooth. Add flour mixture, and beat 30 seconds or until smooth.
- To make Cinnamon Sugar: Combine sugar and cinnamon on large plate.
- Shape dough into 1-inch balls. Roll each ball in Cinnamon Sugar, and place 1 1/2 inches apart on prepared baking sheet. Bake 10 to 12 minutes, or until cookies look dry on tops and are lightly browned on bottoms. Transfer to wire rack to cool. Store in airtight container.
The Vegetarian Times recipe says this makes 45 cookies but there is no way! I got 21 cookies that were not even very big!
The new cooking light magazine came in the mail today and it has some good recipes I can’t wait to try! Love that! I hope that everyone is having a great week, can’t believe that tomorrow is Wednesday already!
